Blueberry Muffins Recipe

We wanted to share a great recipe we used today to treat our wonderful team working hard on the lines!

For this recipe (by Jodi Taylor), we used fresh blueberries from our plant to make delicious muffins. The most important step was to deliver the muffins to our staff minutes after being baked! Every single staff member in the entire plant took a break and enjoyed a  special treat made from our own berries while reflecting and appreciating the hard work completed that day. This is the positive and respected atmosphere that we foster and encourage here at Abbotsford Growers. Enjoy the recipe!

For the Topping

  • 1/2 cup white sugar
  •   1/3 cup all purpose flour
  •   1/4 butter, cubed
  •   1 1/2 teaspoons ground cinnamon

For the Blueberry Muffins

  • 1 1/2 cups all purpose flour
  •  3/4 cup white sugar
  •  1/2 teaspoon salt
  •  2 teaspoons baking powder
  •  1/3 cup vegetable oil
  •  1 egg
  •  1/3 cup milk (more or less)
  •  1 1/4  cup fresh blueberries

Directions

  1. Preheat oven to 400 degrees F.
  2. Grease or line jumbo muffin cups.
  3. For the muffins combine the flour, sugar, salt, and baking powder.
  4. Place vegetable oil in a 1 cup measuring cup; add the egg and milk to fill up to 1 cup and whisk.  Add to flour mixture.
  5. Fold in blueberries.
  6. Fill jumbo muffin cups 3/4 full of muffin mixture.
  7. For the topping mix the sugar, flour, butter, and cinnamon together with a fork.  Sprinkle over the muffins.
  8. Bake for 25 minutes.
  9. Makes 6 jumbo muffins.Cool in pan on a wire rack 15 minutes before turning out muffins.
  10. Serve warm or at room temperature and Enjoy!
